Ingredients

  • 3 large hard-boiled eggs, peeled and chopped
  • 1 large avocado, cubed
  • 2 tbsps mayonnaise
  • 1/2 cup onion, chopped
  • 1 slice bacon
  • 1/4 tsp kosher salt
  • 1/4 tsp ground pepper
  • 1/2 tsp mustard
  • 1 tbsp coconut oil, to cook bacon

Instructions

  1. In a mixing bowl, combine the chopped boiled eggs, bacon bits, cubed avocado, and chopped onion.
