Try this low-carb bacon roasted cauliflower recipe with blue cheese dip.

The perfect keto snack to me is a combination of low-carb veggie with a bold flavored fatty dip.

So, it was almost a love at the first bite with this roasted cauliflower bites with blue cheese dip. To me, it’s an elevated version of cucumber and a ranch dip.

There is more of a grown-up feel to it and it has the perfect combo of savoriness and richness. It’s the type of appetizers or snacks that are perfect for your cocktail hours.

For a casual occasion, I’d serve it right off the oven on a baking sheet with a bowl of the dip on the side. For a fancier occasion, dress it up even more with roasted crushed macadamia nuts. You can even crumble blue cheese on top for a stronger kick.

This cauliflower dish is also flexible enough that you can adjust to your likings.

If you are a vegetarian, feel free to omit the bacon. If you don’t have cauliflower, you can even make this with broccoli or zucchini.

Taking it to work? Put it in a glass container and reheat at work the moment hunger strikes.

Instructions
  1. Preheat the oven to 400 degrees F. Grease the baking sheet or line it with a foil.
  2. Cut the cauliflower florets off the stem and place them on the baking sheet. Cut up the bacon slices into bite-sized pieces. Mix them with the cauliflower. Sprinkle sea salt, pepper, paprika, and cayenne powder if you are using to season. Drizzle the avocado oil on top to coat.
  3. Roast in the oven for about 20 minutes until the top is golden and fully cooked.
  4. Serve them with a side of blue cheese dressing.
