Preheat the oven to 400 degrees F. Grease the baking sheet or line it with a foil.
Cut the cauliflower florets off the stem and place them on the baking sheet. Cut up the bacon slices into bite-sized pieces. Mix them with the cauliflower. Sprinkle sea salt, pepper, paprika, and cayenne powder if you are using to season. Drizzle the avocado oil on top to coat.
Roast in the oven for about 20 minutes until the top is golden and fully cooked.
Serve them with a side of blue cheese dressing.
