Instructions
  1. Melt the butter in a medium saucepan over medium heat.
  2. Add the broccoli and saute until softened.
  3. Whisk in the heavy cream and vegetable broth. Season it with salt, pepper, paprika, onion and garlic powders. Stir occasionally and let it simmer for another 10 minutes or so until it thickens.
  4. Bring the heat to low and add in 3/4 cup of the shredded cheese slowly little by little. Stir it constantly until all the cheese is added and melted in the soup.
  5. Pour the soup into 4 bowls and top with the remaining shredded cheese (1/4 cup) and serve.
