Instructions
  1. Set oven at 350 degrees. First mix flours, baking powder, and salt in a large bowl. Next, add the egg in along with the butter, and combine it to dough form. Using a 9” pie plate, press dough evenly, poking holes in the crust with a fork.
  2. Bake until just golden brown, about 10 minutes. Set aside.
  3. For the filling, first whisk pureed pumpkin with eggs, cream, sugar substitute, vanilla and spices until well mixed. Pour contents into crust.
  4. Bake until filling is just a bit “jiggly” in the center and crust is golden brown in color, 45–50 minutes.
  5. Let pie cool for 1 hour in the oven that’s been turned off, and the door propped open.
  6. Refrigerate until served, using whipped cream as a garnish, to taste.
