  1. Boil a large pot of water for cauliflower. Once it comes to a boil, add cauliflower florets and add a few pinches of salt. Cook for about 10 minutes until tender. Drain the water and press the florets with paper towels to remove the excess water.
  2. Return the cauliflower to the pot and mash with a masher or fork until smooth. or until you reach the desired consistency.
  3. Add the cream cheese, olive oil, and almond milk and stir. Season with salt and pepper. Continue to mash until it’s all seasoned and creamy. Add a drop of milk if you prefer a smoother texture.
  4. Dress it with chives and a slice of butter.
