I love eating avocados, and this is one of my absolute favorite avocado recipes.
Avocados make a handy, filling food for a high-fat, low-carb weight loss diet like keto.
It’s high in monounsaturated fat, a heart-healthy kind of fat also found in olive oil.
With 25-30g of fat in one avocado, it’s an unlike fruit with unbelievable richness.
It’s one staple food you’ll be using repeatedly on a ketogenic diet. You’ll find it in everything from green smoothies to avocado salad.
While you can certainly add slices of avocado on any green salad, I get bored fairly quickly with the same dish. This stuffed avocado salad recipe with chicken offers is far more exciting.
Not to mention it’s easier to make and you can even make most of it ahead.
I also prefer this avocado salad over the basic salad with avocado for it’s portable and mess free.
On the day that I need on-the-go lunch, I take one-half avocado in one container and pre-made chicken salad in another. No dressing is needed and no spilling involved.

- 2 small avocados
- 1 1/2 cup chopped cooked chicken (optional rotisserie chicken)
- 1/4 cup cup mayonnaise
- 1 tbsp scallion, chopped
- 1 tbsp Lemon juice
- 1 tsp coconut oil
- 1/2 tsp paprika powder
- 1/4 tsp garlic powder
- 1/4 tsp cayenne pepper
- 2 tbsps Parmesan cheese

- Cut the avocados in half and remove the seed. Place them on a plate and set aside.
- In a mixing bowl, mix the chicken with mayonnaise, lemon juice, and all the spices. Season it with salt and pepper.
- Stuff the avocado with chicken mixture and sprinkle the cheese on top before serving. Enjoy!
