And if you have keto diet staples like cream cheese and eggs in your fridge, you don’t even need to shop for this recipe.

All it takes is 3 ingredients: eggs, cream cheese, and baking powder.

Yes, it’s really grain free, flour free, carb free.

It’s fluffy and light but not in a delicate airy way.

It still has enough weight to call it “bread”.

What I also love about this cloud bread is its versatility.

With only 21 calories per bread, they make perfect weight loss friendly keto snacks. They are also perfect substitutes for burger buns.

But the best way to enjoy it is to really have it part of your classic egg and bacon breakfast.

Although it’s simple enough to make, here are some tips that can help make your first batch a success.

1) Form the egg whites: Keep egg whites completely separate from the yolks. Make sure your mixing bowl and beaters are dry. Beat until you have firm peaks. When it starts sticking to the beater and making peaks, you know you are getting close.

2) Fold in the cream: When you add in the cream cheese and yolks mixture, don’t mix it. Instead, fold until mixed.

3) Give enough cooling time: Once baked, cool the cloud bread on the cooling rack for an hour.

Instructions
  1. Preheat the over to 300F. Prep one large baking sheet by lining with a parchment paper.
  2. In a small mixing bowl, mix the cream cheese with the egg yolks. Set it aside.
  3. In a separate large mixing bowl, mix the egg whites and baking powder. Using a powered hand-held beater, beat until you form firm peaks.
  4. Gently fold in about 1/2 of the cream mixture. Once fully combined, add in the rest and do the same.
  5. Using a spoon, drop a tablespoon full on a baking sheet. Make about 10 of them. Bake in the oven for about 10-15 minutes. The middle of the bread should not be wet.
  6. Remove from the oven and move to a cooling rack to cool for an hour before serving.

  1. Hi… your recipe needs some better instructions.
    Do you beat the egg whites to firm peaks and the whip in the baking soda?or do you stir in the baking soda and then whip it all.
    Also do you beat some air into the cream cheese then mix in the egg yolks.

    Also can you add seasoning or fresh herbs at any time?
    Plus some sense of spoon size to scoop… teaspoon or table spoon. Can I use a cookie scoop and if so what size.
    Bake time is also ambiguous.
    Please be a little more specific. I have tried this recipe 2x and they were not edit let either time.
